GRAPES Our oenologists source the finest handpicked Raboso and Gleragrapesfrom the foothills of Treviso, located in theheart of the Prosecco region of N. Italy, halfway between the Dolomite Mountains and the Adriatic Sea.
CLIMATE Winters are cold and wet, while summers are hot and sultry with medium temperatures.
VINIFICATION Our oenologists use the Martinotti Charmat wine-making method. We separate the solid parts of the grapes before pressing them to ensure freshness and quality. After cold settling, the grapes undergo a natural alcoholic fermentation at a controlled temperature of 15/16°c. After adding select yeasts, the second fermentation occurs in an autoclave for ten days, pressurized to 2.5atm. The sparkling wine is then chilled, centrifuged, and packaged.
